Dough for fig filled cookies

Filled Cookie Dough

Mix together thoroughly:
1/2 cup soft shortening
1 cup sugar
2 eggs

Stir in:
2 tablespoons thick cream
1 teaspoon vanilla

Sift together:
2 1/2 cups flour
1/4 teaspoon soda
1/2 teaspoon salt

Chill dough. Roll thin (about 1/4”). Cut 3” rounds and place on Silpat liners or lightly greased cookie sheets. Place a rounded teaspoon of desired filling on each. Use your finger to run a “bead” of cream around the outer edge of the cookie—place 3” round of cut dough and finger press the edges to seal.

Bake at 400 degrees until delicately browned on the edges. About 8-10 minutes.

Karen, can butter be substituted for shortening?
