That is similar to recipe I use. There are different ones using a few more eggs, or more sugar. I sometimes add a little nutmeg.

I use a blender for mine, but never saw instructions to let the batter "rest". That makes sense, though.

I put the butter in my skillet and place the skillet in the oven to preheat and melt the butter at once. Then, add the batter. That was the method the first recipe I used suggested, and I am a creature of habit. :)

I like to squeeze lemon juice on mine, sprinkle a little powdered sugar, and fresh raspberries or blueberries. I have also used jam or jelly, when there is no fresh fruit. I have seen them served as a dessert, with more sugar, cinnamon, vanilla or other spices. Use a heavier hand with the powder sugar and lots of fresh fruit.
