This is especially for you, Nancy! Ian said his mom made these for special occasions and he and his brothers would fight over who got the most!
Wash and peel medium potatoes.
Cut them in quarters and place in a pot with enough salted water to cover them.
Boil uncovered for 15 minutes.
Drain off water. Cover the pot with the potatoes and shake/bash the heck out of them! (I love this part!! LOL)
Preheat oven to 350 degrees. Line a cookie sheet with foil and drizzle with oil. Place in oven to preheat. Then add the bashed potatoes. Bake for about 15-20 minutes--turning the potatoes halfway through--so they brown on both sides.
