Kathy, it was (all gone now) so good.

Chocolate Lava cake for one:
10 inch ramekin
Mixing bowl:
Ingredients;
1/4 cup cholate chips
1 Tablespoon butter plus butter for the ramekin
3 Tablespoons granulated sugar
1 large egg
1/2 teaspoon vanilla
2 Tablespoons flour
Pre heat oven to 425 degrees generously butter the ramekin, you want the cake to slide out easily.
Melt chocolate chips with butter in microwave, stirring after every 15 seconds until smooth
In a separate bowl, whisk together sugar, eggs and vanilla until frothy about 30 seconds , then wisk in the flour intil smooth.
Gently stir in the melted chocolate into the egg mixture until well combined. Pour into the ramekin place on a cookie sheet to bake incase you have a spill over.
Bake 13 -15 minutes, I did 10 minutes. watch for the edges to set but the center to remain moist.
Remove from oven and let cool 20 seconds. Using a plate, place the plate on top of the ramekin and flip it over, let set a few more seconds for the cake to release, remove ramekin and enjoy.

When we were cruising on Carnival, they called it "Chocolate Melting Cake", and served it with ice cream. One day it wasn't on the menu, but the waiter said we could order it anytime. It was yummy!
